One aspect of this invention has particular relation to improvements in a system of apparatus and method especially useful in the treatment of materials such as, for example, sour milk and sour cream containing acid forming bacteria and having variable pH values to reduce to a minimum the growth of bacteria and to adjust and control to predetermined values the hydrogen ion concentration or pH value of such milk or cream and the pH of the finished products, such as butter made therefrom.

A butter churn is a device used to convert cream into butter. This is done through a mechanical process, frequently via a pole inserted through the lid of the churn, or via a crank used to turn a rotating device inside the churn. However, some believe the word came from the Scythian culture, as the ancient Greeks tended to herd sheep and goats , whose milk is not as good for butter making as that of cows, which the Scythians primarily herded. This is probably derived from the Old English cyrnel, “kernel,” due to the appearance of butter grains after milk has been churned.
The butter churn gave its name to the milk churn , early examples of which were based on butter churns. The milk churn is not, however, used for the act of churning, but rather to transport milk. Evidence for the use of butter dates back as early as BC,  and there is mention of it in biblical works.

New Dazey churns have brought four figure prices across the United States. Of three new styles being made, the most troublesome has been a six-inch version which is being offered as a “salesman sample. Many of these small new churns were mixed or “salted” into local estate auctions around the country and brought astounding prices. There are at least three sizes of new Dazey churns: one quart, pint, and half-pint, the so-called salesman sample size.
There were several styles of glass Dazey churns made over the years. Collectors generally group the styles by distinctive features of the glass body such as overall shape or how words in the company name are arranged. The three new jars discussed in this article are the style called “round label” from the circular arrangement of the company name on the front of the jar. All of the features in this article refer to that style only. Do not apply the clues to age discussed in this article to any other style of glass Dazey churn.

Plunge churns, also referred to as “up and down” or dash churns, consist of a tall cylinder shaped earthenware or wood vessel and a wooden.
From the mids through the s, the hand-crank butter churn was the most commonly used household butter churn in America. Crank churns replaced simplistic wooden dash churns. Soon after that commercial butter production became widespread. Crank churns came in all shapes and sizes. One early type of crank churn was the barrel churn, a simple device wherein the user turned a handle that directly rotated a dasher inside a stabilized barrel. There were no gears used in this iteration.
The first churns sold by the Dazey Churn Company of St. Louis were made of metal, predominantly tin. They were square in shape and sat in a metal frame. The tin churns were made in larger sizes and used by commercial dairies. Dazey quickly began to offer glass churns as well, which were smaller and designed for household use. These gear driven, glass hand-crank churns were popularized by the Dazey Churn Company in the United States and the Blow Churn Company in England and Australia, but were sold by many other companies around the world.
This metal churn had no rotating paddles inside, but was actually a container mounted on a table-top device.
